Instructions
  1. Preheat the oven to Gas 4, 350f. Grease the bottom of two cake tins. Mix the butter and sugar in a mixing bowl until light.
  2. Whisk the eggs and add them individually to the mixing bowl, continue to beat while sieving flour into the bowl.
  3. Share the mixture fairly between the 2 greased cake tins and bake for 25 minutes. Remove and let them cool for a couple of minutes.
  4. Take the baked cake from both tins and butter the top of one with lemon curd, or jam. Sandwich the two together carefully. Dust with icing sugar and enjoy!
