Preheat oven to 350f, gas mark 4. Mix the shredded carrots, chopped onion, oregano, and spaghetti sauce together in a bowl. Then in a separate bowl mix spinach, shredded zucchini and eggs.
Spread about a third of the spaghetti sauce in a casserole dish. Layer a pasta strip above and top with half the zucchini mixture, add another pasta strip and lastly top with a third of the cheddar and mozzerella cheese. Repeat, for three layers.
Bake on 350f, gas mark 4 for 30 minutes. Remove from oven and top with Parmesan cheese. Easy!
