Instructions
  1. Heat 1 tbsp of oil in a frying pan and cook the onion and garlic for 5 minutes, until softened. Chop the onion, garlic and red pepper.
  2. Add the rice, chilli flakes, cayenne pepper, white wine and cook for 2 minutes, add in the tomatoes and vegetable stock and let it simmer for 10 minutes.
  3. Add the sweetcorn and peas and chickpeas and cook for another 5/6 minutes, squeeze the half of lemon over and serve,
  4. Squeeze over the lemon juice and scatter with the parsley. Serve and enjoy.
