Preheat oven to 150°C, gas mark 2 and place baking paper onto tray. Use a mixer to beat egg whites until soft peaks form.
Very slowly add sugar, whisking until sugar has dissolved. Add the vanilla extract.
Spoon meringue into fair circles onto the baking paper. Cook in oven for 35 minutes. Let meringues cool, some recommend leaving in the oven with the door open for an hour, either is fine.
Place meringues onto a plate, or plates. Add a tablespoon of yogurt to the top of each and top with half the strawberries. Sandwich a meringue on top, add a little yogurt and put on remaining strawberries. Lace with passionfruit and enjoy
