Instructions
  1. Melt the butter and flour in a small pan and set aside for the moment.
  2. Chop all the vegetables into small pieces and heat olive oil in another saucepan, add in the vegetables and fry for 10 minutes until they're soft.
  3. Add in the chicken stock and cook for another 15 minutes and add the melted butter and flour combination. Wait for it to cool for a little and blend ingredients until they're tender and soft.
  4. Reheat for 10 minutes and season with salt and pepper, Serve nice and hot, season with parsley.
