  1. Preheat a large pan and add the olive oil, fry the onions until they're soft and add the chopped or crushed garlic, stir and add in the pumpkin, lentils, rosemary and thyme.
  2. Add the vegetable stock and continue to stir adding the salt and crushed peppercorns. Cover for a 20 minutes while it simmers and the pumpkin becomes tender.
  3. If you're using the pumpkin sees wash them and heat the seeds in a pan with a little olive oil, once they're toasted add salt.
  4. Use a blender to mix the cooked pumpkin until it's smoothed to personal taste, add in creme fraiche and stir.
  5. Serve with a spoonful of creme fraiche on top and add croûtons for that little crunch!
