  1. Heat the fat in a deep fat fryer to around 375, peel potatoes and cut them into chunky fries.
  2. Wash them and leave them to dry. Fry them for a few minutes until soft. Drain them and set aside.
  3. Dust a plate lovingly with flour and add the cod fillets to it, don't skimp on the flour, it helps it all stay together and creates beautiful batter. Set aside.
  4. Put the flour, bicarbonate of soda, salt and pepper into a bowl and add the beer slowly, stop when you have a thick coating of batter.
  5. Beat the batter thoroughly until it's smooth. Add a little vinegar and mix once more.
  6. Change the deep fat fryer temperature to about 320f setting.
  7. Take the cod fillets and dip them in the batter until well coated - Add them to the deep fryer.
  8. Once they are crisp, continue to add each fillet as you take one out, it should take about 5 minutes but if you like crispier batter leave for up to 7.
  9. Keep them on a low temperature in the oven, to crisp up the batter while the chips are fried back at 375f. Serve in takeaway style!
